These Incredibly Refreshing Fruit Snacks Scream Summer
Snacks are never out of season. However, during the summer months, the crave-worthy category is ripe with fruits-filled possibilities. Cheese will always have a special place on our hearts, but peak-season produce can be fleeting. Add lime, pineapple, wine, and coconut milk to a blender and blend until smooth and well combined, about 30 seconds. Add agave nectar and stir to combine. A:
1/2 cup of sugar. 2 cups of water. 1/4 teaspoon of salt. 1/8 teaspoon of cayenne pepper. 1/3 cup of ground chili powder. 1/2 cup of cane sugar. Juice of half a lime. Zest lime onto plate. Add all ingredients except the lime juice and zest to a medium saucepan. Bring to a boil, stirring constantly until sugar dissolves. Reduce heat and simmer for 10 minutes. Remove from heat and add lime juice and zest. Serve immediately.
Heat your oven to 400 degrees Fahrenheit. Cut the watermelon into wedges, keeping them about an inch thick. Place the watermelon onto a baking sheet lined with parchment paper. Bake for 10 minutes. Flip the watermelon and bake for another 5–10 minutes, depending on the size of the piece. Remove from the oven and allow to cool.
Add 1/4 cup freshly squeezed lime juice and 2 tablespoons honey to a small bowl. Stir in 1 teaspoon kosher salt, 1/2 teaspoon ground black pepper, 1/8 teaspoon crushed red pepper flakes, 3 minced garlic cloves, and 1/2 teaspoon ground cumin. Drizzle over grilled watermelon slices and sprinkle with additional salt if desired. Serve with a squeeze of fresh lemon and garnish with chopped cilantro.
